Turkey Mince and Sweet Potato Pie

Serves- 4
Ingredients-
- 1 TBSP Olive Oil
- 4/5 Medium Sweet Potatoes
- 1 Medium Onion
- 400g Turkey Mince Meat
- 100g Mushrooms
- 100g Peas
- 100g Sweetcorn
- A chicken or vegetable stock cube
- Worcestershire sauce
- Gravy Granules
- Chilli Flakes
- Salt and Pepper

1. All the lovely ingredients needed

2. Peel your sweet potatoes, I used 4 small ones but next time I’m deffo going for 5

3. Cut them into smaller chunks

4. Pop them in to a saucepan of boiling water

5. Dice one onion to fry with your turkey mince
-

6. Soften the onions in a frying pan with a little olive oil and add the turkey mince, stir fry until the mince is colored all over

7. Add the peas, mushrooms and sweetcorn or anything else you’re adding to your pie. This is where I add my salt, pepper and obligatory chili flakes.

8. Add in a stock cube, gravy granules and gradually add water until desired consistency

9. Mash your potatoes, depending on how healthy you wanna go a little butter is a nice addition to cream up the mash a little

10. In a large roasting dish add you mince mix into the dish evenly

11. Start to spread your mash over the top of the mince mix

12. Once completed score with a fork and add a little cheese if you’re feeling indulgent! Then pop into a preheated oven at around 175 degrees for 30 minutes 🙂
